About Kappo

I have always enjoyed making sushi, but as a chef, and a food lover, I began wanting to do more than just serving sushi. So, I have created this small, but intimate space, called "Kappo", which is a common style of restaurant in Japan. Here I will prepare everything in front of your eyes, and served the food directly to you over the counter.

Sushi is served seconds after it's made and hot food is served sizzling hot like how it should be. I will be serving you food that I want to eat myself in the way I would like to be served. Please join me in this exciting new culinary adventure.

Chef Bio

Taichi Kitamura is a sushi chef, avid fly fisher and food lover owns and operates Chiso restaurant in Fremont district in Seattle. He was born in Kyoto, raised in the family that operated a few kissaten Cafe in the city until he came to America to attend school in the Seattle area. When he graduated from Seattle University in the mid 90’s, his passion for food became so immense that he decided to one day open a restaurant of his own. It became a reality in September 2001. Although the opening day was only one week after 9/11 terrorist attack, the loyal fans have helped the restaurant to survive and now is thriving.

He claims to be the only fly fishing sushi chef in town. He loves the match the hatch action on Yakima River year round. He also loves the challenge of Steelheading on the rivers of Olympic peninsula and Puget Sound. But most of all, he enjoys talking about it with the regulars at his sushi bar. He believes that the work and fly fishing help keep “balance” in his life. He feels fortunate to live in America because the “balance” is possible here.
